Grilled Peach Lassi
I will take any and every opportunity to plug any of my cultural roots so when I heard this peaches remix, I knew we were making peach lassi. Creamy, thick, and refreshing with that extra spice. Hereβs something you can sip and vibe to this season.
Ingredients:
-Maple Syrup (To taste)
-2 cups coconut or plant based yogurt
-2-4 Peaches (reserve some for assembling lassi)
1 Tsp Cardamom (or to taste)
-1 Tsp turmeric
-Ice (optional for more thickness)
1. Drizzle maples syrup and turmeric on halves peaches and coat fully
2. In an oiled non-stick skillet (I prefer a cast iron) let the peaches caramelize with the maple syrup just till golden brown on both sides. Take off heat and let cool for a bit.
3. Put caramelized peaches, yogurt, cardamom, and milk in a blender with ice (depends on desire thickness) and blend till smooth.
4. Serve in two glasses with remaining peach slices at the bottom and top (sandwiching your lassi).
